Scrambled Egg Muffin

10 Large Eggs
Splash of Milk

Optional ingredients of your choice:
Diced Onion
Green Pepper
Shredded Cheese

Beat the eggs with milk, salt and pepper to taste in a standard mixing bowl.  Place cupcake papers in a standard muffin tin and preheat oven to 350 degrees. Place any variety of vegetables or meats in the bottom of the cupcake paper and fill the paper ¾ ‘s full with egg mixture and top with shredded cheese.  Place muffin tin in oven and bake for 15 to 20 minutes or until mixture is set.

This is an excellent breakfast item to prepare ahead of time and be able to just grab and go.
